Thai food is
one of the few exotic foods I like. I’m just not into eating strange foods. But
curry and Pad Thai and Pad Se Ewe are definitely some foods I can eat all the
time.
Directions
1. In a crockpot, add all ingredients except for the spinach and cashews.
2. Cook 4-5 hours on high, or 8-10 hours on low.
Today’s recipe is for a great curry dish that will leave you in exotic
dish bliss. Best of all? It’s a slow-cooker meal so it’s super easy!

What
you’ll need
1 teaspoon minced garlic
1/2 teaspoon salt
2 teaspoons curry powder
1 can unsweetened coconut milk, or coconut juice
1/2-1 can diced tomatoes, drained
1 lb chicken breast, boned and skinned
3 cups fresh baby spinach
1 cup cashews 1/2 teaspoon salt
2 teaspoons curry powder

1 lb chicken breast, boned and skinned
3 cups fresh baby spinach
Directions
1. In a crockpot, add all ingredients except for the spinach and cashews.
2. Cook 4-5 hours on high, or 8-10 hours on low.
3. About 10 minutes before finished,
take the chicken out and shred with a fork. Add back the chicken, and then stir in the spinach and cashews into the curry.
4. Serve over rice or eat by itself!
