If you are looking for a fantastic dinner idea for tonight, look no further. Pulled pork salad—otherwise known as paradise. I’m going to give you a recipe for dressing, beans, and everything else needed to make this amazing salad.
Creamy Tomatillo Dressing
1 (1 ounce) package Hidden Valley
Ranch Dressing mix
1 cup buttermilk
1 cup mayo
1 large or 2 small tomatillos (they
are green and look like tomatoes)
1 teaspoon dried minced garlic
1/2 bunch cilantro, chopped
1/2 teaspoon lime juice
Blend all ingredients together in a blender or food processor and store in the refrigerator to let the flavors meld.
Spiced Black Beans
1-15 ounce can black beans, halfway drained
1 teaspoon dried minced garlic
1 teaspoons cumin
1 ½ tablespoons olive oil
4 ounces tomato sauce
½ can sweet corn, drained
Salt and pepper to
taste
This makes enough beans for 2-4 people, if you want more, just keep doubling the recipe.

You can cook this in a
pan, but I like sticking it in a crock pot on high and leting it cook while you
are making everything else.
Mix everything together
in a crock pot, and set on high until hot. About 45 minutes. Stir a couple
times during the heating process.
Now here is an idea of
how to put it together into a meal:
Toss romaine lettuce, Jack Daniel’s pulled pork, beans and
dressing together. You can also top with chopped tomatoes or avocado or cheese or rice or whatever else you can think of!
