Once upon a time I had some leftover roast. I decided to try out a recipe
for baked nachos, and told Josh that I would be making that for dinner. What he
didn’t realize is that these nachos put any Mexican restaurant to shame. And we
love Mexican. You see, Mexican is one of those foods that you can never NOT be
in the mood for. The flavors are tasty, the portions are great, and you just
leave feeling happy.
Side note, if you want to go get some great Mexican and live in Utah, I suggest
La Costa. Grandpa Costa will bring you amazing refried beans with your chips
and salsa—and trust me, that is reason alone to go get their comida deliciosa.
What you’ll need
3 cups shredded Mexican cheese
1 can of low-sodium corn
1 cup sour cream
1 can pinto beans
2 tablespoons taco seasoning
1 teaspoon ground cumin
1 bag corn or flour tortilla chips
Sour cream and guacamole
Back to the homemade nachos through. They are creamy and full of flavor,
and the best part is they aren’t very greasy at all! Josh seriously loved the
nachos and between the two of us we ate the whole pan. It is seriously like a
nacho superstar.
I tried the dish with chicken and didn’t like it as much, so I would
suggest just sticking to the roast.
What you’ll need
Leftover roast
3 cups salsa3 cups shredded Mexican cheese
1 can of low-sodium corn
1 cup sour cream
1 can pinto beans
2 tablespoons taco seasoning
1 teaspoon ground cumin
1 bag corn or flour tortilla chips
Sour cream and guacamole
Place shredded meat in a gallon Ziploc
bag. Add 2 cups cheese, salsa, corn, pinto beans, sour cream, taco seasoning
and cumin; zip close and mix well. You can even dance a little with the bag if
you want! Let flavors meld. Heat oven to 350 degrees F.
Pour half into a greased 13-in. x 9-in.
baking dish. Top with half of the chips; repeat layers.
Bake, uncovered, at 350 degrees F for
25-30 minutes, or until heated through.
Sprinkle with remaining cheese. Bake 5
minutes longer or until cheese is melted.
Serve with sour cream and guacamole,
and enjoy a heavenly fiesta in your mouth.
This recipe will easily feed four people; unless you’re really hungry…then it will only feed two. But those two people will probably regret it, put on stretchy pants and fall into a food coma, and then watch a season of Pawn Stars or something, because they will be so ridiculously full.
