I am about to tell you one of the strangest recipes—nay, thee strangest recipe—I have ever made to date. But, you have to try it because you’ll love them.

Want to know how I know? My mother-in-law, who very much loves chocolate, tried one without knowing what was in them and went out of her way to tell me they are delicious. The proof is right there folks, these are so good.

Now, let me tell you the secret ingredients that are in them: black beans and avocado. Yes, a delicious low-fat and gluten-free fudgy brownie made with black beans and avocado. They are so good. You just have to trust me on this one the whole time you are making them.



Chocolate Fudgy Brownies

 Ingredients 

1 – 15 oz can of black beans, rinsed and drained

1 large egg

2 large egg whites

1/2 of a large ripe avocado

1 teaspoon olive oil

1/4 cup flour or gluten-free flour

2/3 cup unsweetened cocoa powder

1/4 teaspoon baking powder

1/4 teaspoon baking soda

1/4 teaspoon salt

2 teaspoons vanilla extract

1/2 - 1 cup brown sugar

 1/3 cup chocolate chips of choice, plus some for topping

Instructions 

1. Preheat oven to 350 degrees F. Grease an 8×8 inch baking pan.

2. Place black beans, avocado, egg, egg whites, and olive oil into the food processor and puree until it’s completely smooth. If the batter is too thick to process you can add a little water.

3. Take pureed mixture and put into your mixing bowl. Add flour, cocoa powder, baking powder, baking soda, salt, vanilla extract and brown sugar into the mixing bowl and mix until smooth.

4. Add into the chocolate chips and mix just until incorporated.

5. Pour the batter into your pan and sprinkle additional chocolate chips on top. You can also fold in nuts or swirl in peanut butter.

6. Bake for 25-35 minutes or until knife inserted in center comes out somewhat clean and top of the brownies begin to crack.

7. Remove from oven when done, cool and then enjoy!
